Would it be ok to have a character who stowed away on the ship? Or would that distract from the plot too much?

I wouldn't recommend it personally. If life support is balanced for twenty people and there's twenty-one, the stowaway is risking all their lives and changing all the equations with the change in ship's mass. Usual remedy is to jettison them out the airlock.

I have to agree with Enigma. If the number of people on the ship exceeded the number that could survive there... it wouldn’t end well. Also, security would have noticed a stowaway before the ship left Earth.
