Dragon rider? As in hatching eggs in the sandy floor of a weir? Threadfall? Or something more D&Dish?

That would depend on the idea
Dragon rider guard - you have just graduated from the famed Highridge riding academy. So you and your dragon, who've you've raised from a hatchling (but not necessarily hatched), are given tasks or duties.
explorer/adventurer dragon rider - you can choose the kind of dragon you ride, how you and your dragon meet, stuff like that. You'd just need to basically be passing "tests" different regions have for either an explorer or adventurer to gain access to that region.
partners - the idea is actually named like that, because the dragons have a human form and just as much have to choose their riders as the riders have to choose them. They will learn along side them, bond/trust them, get into arguments with them (because what good partnership doesn't argue sometimes), and do the best they can
Although I'd love an rp where people hatch their eggs, I know that'd be a slow paced rp and I'd be even more nervous about keeping people interesting in it >.<

I like the partners idea. Possibly some sort of organization that uses the dragons and their brawn riders to perform various missions? Investigate issues, deliver important messages or items, act as one of the representatives of the organization?

Ya, I like all of those ideas!
I feel like investigating issues or being representatives would be interesting. For all those kinds of things, I guess each set of partners would need to be set ranks to qualify for stuff. Huh? After all, some of those things can either get really deadly or require a lot of trust from the organization

Among us - dragons are thought to be fantastical creatures, beings of legend and myth. Only you find out not only are they real. They live among you in human form. What do you choose to do? Follow the rumors to join a secret organization of dragon hunters, befriend the dragons and become part of their secret organization? Or just freak out, because dragons are real
Dragons king - the time has come, once every millennia when the last ruler of dragons is getting older. A search for a worthy replacement starts, one who is not only strong but wise. Which of the dragon will be to fill the rule and watch over all of dragon kind? Will it be you? Or maybe someone you know? What trials will those that wanna try face? How will the humans react to all the dragons acting differently? Only time will tell
